Overnight Muesli

If you make this muesli into a parfait and layer it with plain yogurt, berries, chopped apple and granola, you have a meal that is not only healthy but pleasing to the eye.


Muesli is full of omega 3's and because of the oats, chia, nuts, and seeds, it will help you feel full longer.

Ingredients:


  • 2 C. Rolled Oats

  • 1 C. Almond Milk

  • 1 TBS. Lemon Juice

  • 2 tsp. Vanilla

  • 1/4 C. Golden Raisins

  • 1 medium sized Apple - chopped

  • 1 C. can Crushed Pineapple (or 1 C. Chopped Fresh Pineapple)

  • 1/2 C. Frozen or fresh mixed berries

  • 3 TBS. Pumpkin Seeds

  • 1/2 C. Plain Organic Bulgarian Yogurt or a favorite Vegan Yogurt (optional)

  • 3/4 C. Water ( if you would like it sweeter, use apple juice instead)

  • 1 tsp. Cinnamon

  • 1/8 tsp. Nutmeg

  • 1/4 C. Unsweetened Shredded Coconut

  • 3 TBS. Chia Seed

  • 1/4 C. Dried Cranberries


Directions:


  1. Mix all ingredients in a large bowl.

  2. Cover bowl and place in refrigerator overnight.


This muesli can be served alone or topped with fresh fruit or nuts.


It is not essential to have all the above ingredients to make this dish. We encourage you to make this recipe your own! For example, you can swap out the pineapple for apricot or peaches, add dried or fresh blueberries instead of cranberries, add in walnuts or pumpkin or sunflower seeds, ect. The possibilities are endless!
