Black Bean n' Beet Burgers

Don't let the beets throw you off, these taste amazing!


Beets help cleanse the blood, are loaded with folates which help lower your risk of heart disease and are high in magnesium and potassium.

Ingredients:


  • 2 C. brown rice - cooked Or do a mixture of Black rice and Quinoa, Equals 2 cups cooked.

  • 1/2 C. Onion Chopped

  • 2 Cloves Garlic Minced

  • 2 TBS. Flax Meal

  • 2 tsp. Cumin

  • 2 tsp. Garlic

  • 2 tsp. Liquid Smoke

  • 2 1/2 C. Black Bean

  • 1 C. Mushrooms Chopped

  • 2 C. Oatmeal

  • 2 TBS. Onion Powder

  • 2 TBS. Ketchup

  • 1/4 C. Braggs Liquid Aminos

  • 2 1/2 C. Raw Shredded Beets

  • 2 tsp. Smoked Paprika

  • 1/4 C. Nutritional Yeast

  • 1 TBS. Basil


Directions:


  1. Preheat oven to 375℉

  2. Place chopped onion and garlic into a pan and cook over medium heat until onions are soft.

  3. Add mushrooms and seasonings to pan and continue to cook over medium heat until mushrooms and onions are slightly browned. (Add water to pan to deglaze the pan rather than using oil.)

  4. In a large bowl, mash black beans.

  5. Add oatmeal, flax meal, and nutritional yeast to the beans and mix well.

  6. Add ingredients from pan to the bean mixture and mix well.

  7. Add beets to the bean mixture and mix well. If the mixture is too dry, add a small amount of water until sticky, yet firm consistency is achieved. If mixture is too wet, add a small amount of oatmeal to mixture and mix well. Continue adding until desired consistency is achieved.

  8. Line a baking sheet with parchment paper.

  9. Form mixture into patties and place onto baking sheet.

  10. Bake at 375℉ for 15-20 minutes until they have browned and are slightly crisp.
